Lazy Beef Pot Pie
I’ve made this with chicken before but the ground beef version is SO delicious too. Alfredo sauce, mirepoix, crescent rolls, done. I wanted to drink the sauce straight from the pan. Just a handful of ingredients and it comes together so fast.
Why You'll Love This
- •One pan, one mess
- •Budget friendly
- •Great for meal prep or dropping of at a friends house

Ingredients
Alfredo Sauce
I use one 15 oz jar of store bought alfredo sauce here, which is the easiest route. If you want to make it from scratch, melt 2 tablespoons of butter in a pan, add a cup of heavy cream, and stir in half a cup of parmesan until smooth.
Crescent Rolls
You can also use puff pastry or a store bought pie crust if you prefer a more traditional potpie crust.
Ground Beef
This recipe works just as well with 2-3 cups of shredded chicken if you want to keep it more classic.
Mirepoix
If you can’t find this, just dice 2 stalks of celery, 2 carrots, and 1 yellow onion finely and you’ll have the same thing.
Storage
Leftovers keep in the fridge for up to 3-4 days in an airtight container. To make it ahead, prep the filling up to 2 days in advance and store it in the fridge, then top with crescent rolls and bake when you’re ready. If you’re bringing it to a friend, assemble it unbaked, cover tightly, and let them pop it in the oven at 375°F for 15-20 minutes. The filling also freezes well for up to 3 months, just thaw overnight in the fridge and add fresh crescent rolls before baking.

Instructions
- 1
Preheat your oven to 375°F.
- 2
In a skillet over medium heat, melt the butter. Add the mirepoix and ground beef, breaking the beef apart as it cooks. Cook for 7-8 minutes, stirring occasionally, until the beef is fully browned and the vegetables have softened. Season with salt and Italian seasoning.
- 3
Stir in the alfredo sauce. If the mixture feels too thick, add the water a little at a time to loosen it up.
- 4
Cut the crescent rolls into 10 pieces and arrange them over the top of the filling.
- 5
Bake for 15-20 minutes, or until the crescent rolls are golden brown.
