Ingredients

Instructions
- 1
Heat a pan over medium-high heat and add 2 tbsp olive oil. Sear the steak on all sides until lightly browned, about 2–3 minutes per side.
- 2
Add the sliced onion and carrots as well as the diced potatoes to the bottom of the slow cooker.
- 3
Place the seared steak on top.
- 4
In a bowl, mix beef broth, tomato paste, garlic, Worcestershire sauce, black pepper, paprika, thyme, and 2 tbsp olive oil until smooth.
- 5
Pour the mixture into the slow cooker. The liquid should come about halfway up the meat, not fully cover it.
- 6
Cover and cook on LOW for 6 hours or HIGH 3.5 hours.
- 7
During the last 30–45 minutes of cooking, remove the lid and continue cooking on LOW. This allows the sauce to concentrate and deepen in flavor.
- 8
Taste the sauce and add salt as needed. Start with ½ tsp, stir, taste, and adjust until the flavor is rich and balanced.
- 9
Return the sliced steak to the slow cooker, spoon the sauce over the top, and serve hot.
