This cheesy beef and rice skillet is perfect for a busy weeknight! Made with just a handful of ingredients, it comes together in one pan so quickly! I’ve been making this for years and love having it as leftovers as well, either as is or with a tortilla as a burrito!

Cook the basmati rice according to package instructions.

In a large pan over medium heat, add a little olive oil if using. Add the ground beef, break apart, and cook until mostly browned.

Add the fire-roasted bell peppers and onion. Stir and sauté for a few minutes until softened and combined with the beef.
