Boursin Tomato Spaghetti
This creamy Boursin tomato spaghetti is a perfect Friday night dinner. Fresh tomatoes are blistered in olive oil until they burst, then mashed into a sauce with some Boursin cheese and a handful of cheddar. The result is rich, garlicky and so so good, and it comes together in about 25 minutes.
Why You'll Love This
- •Ready in about 25 minutes. The sauce cooks while the pasta boils.
- •Kid friendly. It's cheesy, mild and hard not to love.
- •No cream needed. Boursin and starchy pasta water make it creamy all on their own.

Ingredients
Tomatoes
Cherry or grape tomatoes work best since they blister and burst in the pan.
Spaghetti
Any long pasta works, I used protein pasta!
Boursin and Cheddar
The garlic and herb one is my favorite. It melts into the creamiest sauce. Goat cheese works in place of Boursin, and parmesan or mozzarella works in place of cheddar.
Storage
Keep leftovers in an airtight container in the fridge for up to 3 days. Creamy pasta thickens as it cools, so add a splash of pasta water or broth when you reheat it on the stove or in the microwave. Stir it gently until it's warm and saucy again.

Instructions
- 1
In a large deep pan or Dutch oven, heat the olive oil over medium heat. Add the tomatoes and season with salt and garlic seasoning. Sauté until the tomatoes blister and start to burst, about 10 minutes.
- 2
While the tomatoes cook, boil the spaghetti according to package directions, pulling it about a minute before al dente. Reserve the pasta water before draining.
- 3
Once the tomatoes are soft enough, mash them right in the pan. Place the Boursin in the center, let it melt for about a minute, then stir it into the sauce.
- 4
Add the pasta to the sauce. Stir in the pasta water a little at a time until it reaches your desired consistency.
- 5
Add the cheddar and stir everything together. Season with salt to taste.
Notes & Tips
I like mine on the saucier side, but make it however you love it. Creamy pasta thickens as it cools, so add a splash of pasta water or broth when reheating leftovers.
