One of my favorite gnocchi recipes! Especially if you want something hearty yet something light and fresh!

    Heat a pan over medium heat and add a drizzle of olive oil. Add gnocchi and cook, stirring occasionally, until golden and cooked through. Remove from the pan.

    Add a little more olive oil to the same pan. Add cherry tomatoes and chicken sausage. Sauté for a couple of minutes until the sausage is browned and the tomatoes start to burst.

    Add the gnocchi back into the pan and toss everything together.

    Add stracciatella or burrata. If using burrata, break it apart so it melts into the dish.

    Drizzle with hot honey and serve immediately.
