One Pot Sausage and Spinach Pasta

By Frida Sofia30 min totalServes 4-5 servings

If weeknight dinners have been feeling uninspired, this is the reset! One pot, minimal ingredients, done in under 30 minutes.

I’m using bone broth instead of water for extra flavor and protein, and I used @enjoybrami pasta mostly because it’s delicious but it’s also high protein, holds up perfectly in the broth, and it made this the easiest weeknight dinner I’ve had in a while! Each serving of this meal comes out to around 45 grams of protein, which for a pasta dish is so good 🫶✨

Why You'll Love This

  • One pot, one mess
  • So flavorful, perfect for a weeknight or as leftovers
  • High in protein

Ingredients

Protein Pasta

I love this type of pasta because the flavor is amazing but you can also swap for regular pasta

Italian Sausage

If you prefer you can swap for ground beef but if so I would add more salt and some more seasonings

Storage

Leftovers keep in the fridge for up to 3-4 days in an airtight container.

Instructions

  1. 1

Heat 1 tbsp olive oil in a large pot over medium high heat. Add Italian sausage and break it apart as it cooks. While browning, add 1/2 tsp red pepper flakes and 1 tsp salt, plus more to taste. Cook until fully browned.

  2. 2

Add Brami pasta (fusilli) and chicken bone broth to the pot. Stir to combine, then cover with a lid.

  3. 3

Cook covered for about 10 minutes, until the pasta is almost al dente.

  4. 4

Add the baby spinach to the pot, stir everything together, add back the lid, and let the spinach wilt for 1-2 minutes.

  5. 5

Remove the lid and stir in the Parmesan cheese, grated or shredded. Taste and adjust salt. Serve immediately.
