Creamy Pesto Chicken

If you have some chicken breasts and pesto at home you can whip this up for dinner in 30 minutes! You can easily customize this to use whatever vegetables and cheese you have at home, the key is the sauce which is so good 🤤

Slice up chicken breast into thinner slices. Season with salt, pepper, basil and oregano

Add some avocado oil to a large pan, heat up and add chicken. Let cook for a couple of minutes per side until golden brown, chicken doesn’t have to be cooked through yet. Remove from pan and set aside.

Add a little more oil to pan if needed, add minced garlic and diced bell pepper. Let cook for a minute before adding broth and cream. Deglaze pan and add pesto. Let cook for 3-5, bring to a boil and then turn down the heat and let simmer to let sauce thicken. Add parmesan cheese and stir, then add mozzarella on top of the sauce.

Bake in oven at 350F for 5 minutes. Switch to broil and bake for another 2 minutes. Remove from oven and serve with rice 🍚
