Steak Chimichurri Salad
If there is one salad I make on repeat all summer long, it is this one. It has everything I want when it is hot out: Persian cucumbers, cherry tomatoes, chickpeas, and steak, all mixed in a bright, herby dressing that tastes just like the best chimichurri. It is fresh and light but still so filling, which makes it my go to for an easy lunch or simple dinner.
It also keeps so well, which makes it perfect for meal prep, and it tastes even better the day after when all the flavors have had time to soak in together. You can keep it in the fridge for a couple of days and it holds up beautifully, so make a big bowl and thank yourself later in the week. If you want to, you can also add some cheese. Feta or fresh mozzarella are incredible here.

Steak
Cooked sirloin is my favorite here but you can use whatever steak you have on hand. Grilled chicken, shrimp, or just the chickpeas if you want to keep it vegetarian.
Cilantro and parsley
This is where all the fresh, green flavor comes from and what makes the dressing taste like chimichurri. Sub: lean on more parsley if cilantro is not your thing, or add fresh mint or basil.
Storage
Store leftovers in an airtight container for 3 days.

Chop the cucumbers and cherry tomatoes. Drain and rinse the chickpeas. Cut the steak into bite sized pieces. Chop the cilantro and parsley, mince the garlic, and zest half the lemon before juicing the whole thing.

Add everything to a large bowl along with the olive oil, red wine vinegar, and all of the seasonings. Toss until well combined, then taste and adjust the salt.
Notes & Tips
Salt is flexible, so start with 1 teaspoon and work up to 2 to taste.
