One Pan Tomato Orzo

Orzo goes well with almost anything! In this one pot meal I made it with cheese, tomatoes and chicken sausage. So good and so easy!

Ingredients

Chicken sausage

Cheddar chicken sausage brings built in flavor so you’re not starting from scratch with seasoning, plus it browns up fast for a quick weeknight dinner. Try Italian chicken sausage or spicy chicken sausage for a different flavor direction.

Orzo

Cooks directly in the broth so it soaks up all that flavor, and it gives the dish a creamy, almost risotto like texture without any cream.

Pesto

Stirred in at the end for a fresh, herby finish. Use less pesto if you prefer.

Storage

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or on the stove with a splash of broth or water to loosen it back up,

    Slice the chicken sausage and fry in a pan for a couple of minutes.

    Add the cherry tomatoes and diced onion to the pan, cook together until the sausage is browned and the tomatoes are blistering and softening.

    Add the dry orzo and chicken broth, stir to combine.

  4. 4

    Bring to a boil, then reduce heat, cover with a lid, and simmer until most of the broth has been absorbed by the orzo.

    Remove the lid, stir in the pesto and Parmesan cheese, and cook on very low heat until everything is combined.
