One Pan Comfort Chicken
This creamy comfort chicken is so so incredibly easy to make, very wholesome and comforting. I love that it all comes together in one pan, with potatoes and green beans cooked right in, so the chicken and veggies soak up all that creamy sauce. Definitely one of those meals I love to have up my sleeve when I want something flavorful and easy!

Ingredients
Chicken Thighs
The protein and the base of the dish. Totally works bone in thighs too. Sear them skin side down first to render the fat, then let them braise in the sauce a little longer, about 25 to 30 minutes, until they hit temp. You can use chicken breast instead, just watch the cook time so it doesn’t dry out.
Potatoes
Baby potatoes or Yukon gold work best, but any waxy potato is fine.
Green Beans
Swap in broccoli, peas, or spinach depending on what you have.
Heavy Cream
What makes the sauce rich and smothered! Half and half works in a pinch, just don’t let it boil or it can break.
Storage
Let it cool to room temperature first, then store it in an airtight container in the fridge. It’ll keep for 3 to 4 days.

Season the chicken thighs with salt. Heat the olive oil in a Dutch oven or large pan over medium high and sear the thighs until browned and cooked through, about 5 to 6 minutes per side. Remove to a plate.

Lower the heat to medium. Add the diced onion and cook until soft, about 4 minutes. Add all the seasoning, the garlic powder, oregano, cumin, plus some salt and pepper, then add the butter and stir until fragrant, about a minute.

Add the potatoes and the chicken broth. Cover and simmer until the potatoes are almost tender, about 12 to 15 minutes, checking once partway through.

Pour in the heavy cream and bring to a bare simmer, never a hard boil, so it doesn’t break. Add the green beans, stir, cover, and cook 4 to 5 minutes until they keep a little bite.

Add the chicken back in, top with the Parmesan, cover, and let it sit a minute or two until the cheese melts and everything warms through. Taste and adjust salt before serving.
Notes & Tips
If the sauce looks thin, leave the lid off for a few minutes to tighten it up
