Creamy Elote Pasta

This will be my new go to creamy pasta when I want something fast but still really flavorful! I used half a pound of rigatoni, browned up some chicken sausage, added in green onions for a little bite. The real shortcutis the sauce, I used 8 ounces of Trader Joe’s Everything But the Elote dip.
If you’ve never had elote, it’s basically Mexican street corn flavor. creamy, tangy, a little cheesy, a little chili lime situation, this dip captures all of that. Once it melts into the pasta with a splash of pasta water, it turns into the creamiest sauce without needing cream or cheese.

Cook pasta according to package instructions in a large pot. Reserve ½ cup of pasta water before draining.

Heat a large pan over medium heat. Add chicken sausage and break it up.

Add the white parts of the green onions and cook until sausage is fully browned.

Add drained pasta to the pan.

Pour in ½ cup reserved pasta water and add the dip.

Stir until everything is well combined and creamy.

Top with the green parts of the onions and serve.
