Boursin Chicken Sausage Bake
We are smack in the middle of summer, which for us somehow means I have even less time to cook than usual. Standing over a hot stove every night is not something I’m interested in, and I’ve definitely decided to make dump and bake dinners more and more throughout the week. The oven does all the work, I do almost none of it! This recipe uses chicken sausage, rice, and Boursin cheese, and it turned out to be one of the best weeknight dinners I’ve made in a while. I’m already planning to make it again!

Ingredients
Rice
Use uncooked basmati rice here, and make sure you rinse it before adding it to the dish. Rinsing removes excess starch so the rice cooks up fluffy instead of gummy.
Chicken sausage
I love the Unexpected Cheddar Sausage from Trader Joe’s for this because it already has cheddar cheese baked right into it, which adds so much flavor to the whole dish. That said, you can swap it for whichever chicken sausage you have at home.
Broccoli florets
Fresh or frozen both work. Just cut the stems in half so you don’t end up with massive pieces.
Chicken broth
You can swap for vegetable broth if that’s what you have on hand.
Heavy cream
Swap for half and half if you prefer, or skip it entirely and add another cup of broth instead.
Boursin cheese
If you don’t have it, cream cheese works as a substitute! I’d recommend also adding some extra seasoning alongside it, garlic powder, oregano, and basil would all be great.
Shredded cheese
I used a Mexican blend, but cheddar, mozzarella, or even feta would all be great here.
Storage
Store leftovers in an airtight container in the fridge for up to four days. This also freezes well, freeze for up to three months. When you are reheating, use the the stovetop or the microwave, preferably with a splash of broth or cream to loosen it back up.

Add uncooked basmati rice, chicken sausage, and broccoli florets to a casserole dish. Pour chicken broth and heavy cream over everything and press down gently into an even layer.

Place Boursin cheese in the center of the dish and sprinkle shredded cheese evenly over the top.

Cover with a lid or foil and bake at 400°F for 35 to 40 minutes.

Remove the lid or foil and bake for another 5 to 10 minutes.

Remove from the oven and carefully press the Boursin down into the rice, then stir everything together. Season with salt to taste.
