Cinnamon Apple Breakfast Crumble

If you love apple pie but it's 7am and you have no time, this one is for you. Diced apple, a little butter, cinnamon, honey and quick oats all go into one pan and turn into the yummiest, caramelized breakfast situation.

It's not oatmeal in the mushy sense. The oats toast in the butter and get these golden, crispy edges, almost like a warm granola crumble. I ate it with creamy yogurt and it felt like dessert for breakfast.

Why You'll Love This

  • •One pan, one mess. Everything cooks together, so cleanup takes a minute.
  • •Kid friendly. It tastes like apple pie, so it rarely gets turned down.
  • •Balanced. Fiber from the oats and apple, plus protein from the yogurt on top.

Ingredients

Apple

A firm, sweet apple holds its shape best. Honeycrisp, Gala, Fuji or Pink Lady all work. Leave the skin on for color and fiber.

Quick cooking oats

These soften fast and get toasty. Old fashioned oats work too, just add an extra splash of water and a couple more minutes.

Honey

Adds sweetness and helps everything caramelize. Maple syrup is a great swap. Don’t add too much or it’ll be too sweet.

Yoghurt

Greek yoghurt adds the most protein, but any plain or vanilla yogurt is delicious.

Storage

Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat in a pan or the microwave with a splash of water to loosen it back up. For easy weekday mornings, make a triple batch on Sunday and portion it into jars with the yogurt kept separate.
