5 of my favorite dinners for $96

Five dinners this week, and they cover a lot of ground! All made with ingredients you can find in almost any grocery store. Two of them are dump and bakes, so you throw everything in one dish and let the oven do the work. There’s chicken, beef, and shrimp in the mix, so you’re not eating the same thing twice. All of these are easy and some of my favorite dishes to make, the kind you really can’t go wrong with!

Check your fridge, freezer and pantry for what you already have at home then grab the grocery list and recipes below!

Produce

  • 24 oz baby potatoes

  • 2 lemons

  • 4 cups baby spinach

  • 2 cups broccoli florets (fresh or frozen)

  • 2 containers cherry tomatoes (1 pint plus 12 oz)

  • 1 yellow onion (plus 1 more if you skip the mirepoix container in the pot pie)

  • 1 container mirepoix (14.5 oz), or 2 celery stalks, 2 carrots, 1 yellow onion

Meat & seafood

  • 1 1/2 lb chicken breast

  • 1 lb ground beef

  • 24 oz chicken sausage total (12 oz Trader Joe’s Unexpected Cheddar, 12 oz sweet Italian)

  • 1 lb shrimp

Dairy & cheese

  • 3 1/4 cups heavy cream (can sub half and half in the Boursin bake, coconut milk in the orzo, or milk in the mash)

  • 6 tbsp butter

  • 2 packages Boursin cheese

  • 1 cup shredded cheese (Mexican blend, cheddar, or mozzarella)

  • 1/2 cup Parmesan cheese

  • 1/2 cup sour cream

Pantry & dry goods

  • 1 cup uncooked basmati rice

  • 1 lb pasta (farfalle)

  • 2 cups dry orzo

  • 15 oz jar alfredo sauce

  • 8 1/2 cups chicken broth or bone broth (two 32 oz cartons)

  • 3 tbsp sun-dried tomatoes

  • 1 can crescent rolls

  • 1 tbsp minced garlic

  • Olive oil

  • Italian seasoning

  • Garlic seasoning​​​​​​​​​​​​​​​​

1. Creamy Lemon Chicken with Mashed Potatoes

Some nights the answer is just mashed potatoes and chicken! There’s nothing very unique about this meal but it’s a meal I could probably always eat. The sauce in this dish feels creamy yet bright from the lemon and cream, and the Aglio Olio seasoning adds so much flavor. Pile the chicken and that lemony cream sauce over buttery mashed potatoes and you’re all set!

I’ve made this with chicken before but the ground beef version is SO delicious too. Alfredo sauce, mirepoix, crescent rolls, done. I wanted to drink the sauce straight from the pan. Just a handful of ingredients and it comes together so fast.

3. Boursin Chicken Sausage Bake

We are smack in the middle of summer, which for us somehow means I have even less time to cook than usual. Standing over a hot stove every night is not something I’m interested in, and I’ve definitely decided to make dump and bake dinners more and more throughout the week. The oven does all the work, I do almost none of it! This recipe uses chicken sausage, rice, and Boursin cheese, and it turned out to be one of the best weeknight dinners I’ve made in a while. I’m already planning to make it again!

I somehow always keep orzo in the pantry so this dish can easily be whipped up if you grab some shrimp from the grocery store! It’s so creamy and feels fancy but easy enough to make for a weeknight 🥘 skip on the red crushed peppers if you don’t like spicy 🌶️
