Taco Beef Baked Sweet Potato

Loaded sweet potatoes but make them weeknight easy! I bake the potatoes until they’re super soft, pile on taco beef, add lots of cheddar cheese, and melt it in the oven. Finish with avocado and dinner’s done. So simple and really good 🌮🥔🧀

Preheat the oven to 350°F. Pierce the sweet potatoes several times with a fork, drizzle with olive oil, and rub the oil over the skins. Place them on a baking sheet and bake for 70–90 minutes, until very tender and easily pierced with a fork.

Meanwhile, heat a drizzle of olive oil in a large pan over medium heat. Add the ground beef and cook until browned.

Add the taco seasoning and water according to the package instructions. Stir and let it simmer briefly until the sauce thickens. Remove from heat.

Once the sweet potatoes are cooked, transfer them to a baking dish. Slice them open and gently mash the inside with a fork.

Spoon the taco beef evenly over the sweet potatoes and top with the shredded cheddar.

Bake for 10–15 minutes, until the cheese is melted.

Serve topped with sliced avocado.
