Soyaki beef bowl

This is one of those dinners I make when I want something really good but don’t want to spend much time cooking. The beef cooks in Trader Joe’s Soyaki sauce so it’s super flavorful, and then everything goes over rice with a fried egg and lots of scallions. It’s quick, nutritions and perfect for a busy weeknight.

Cook the rice according to package instructions. Set aside and keep warm.

Heat a large skillet over medium heat and add a drizzle of olive oil. Add the ground beef and the white parts of the scallions. Cook, breaking up the meat, until mostly browned.

Stir in the Soyaki sauce and water. Let everything simmer for 2–3 minutes until the beef is fully cooked and the sauce slightly thickens.

While the beef finishes cooking, heat a separate pan with a little oil and fry the eggs sunny-side up.

Divide the rice among bowls. Top with the Soyaki beef, sprinkle with the green parts of the scallions, and add a fried egg to each bowl. Serve with sliced avocado.
