Every time I make this I wonder why I do t make it more often? It’s just a handful ingredients and tastes better than takeout! So fresh yet saucy and delicous!

    Cook the noodles according to package instructions (they only take about 30 seconds). Reserve 1/3 cup of the cooking water, then drain.

    Heat olive oil in a large pan over medium heat. Add the sliced bell peppers and sauté for 2–3 minutes until slightly softened.

    Add the shrimp, season with salt and pepper, and cook for about 2 minutes per side until fully cooked.

    Add the cooked noodles to the pan along with the soyaki sauce and reserved noodle water. Stir in butter if using.

    Stir everything together until well coated.
