Quick Mushroom Boursin Pasta

Ingredients

Bring a pot of salted water to a boil and cook the pasta according to package instructions.

Meanwhile, heat a large skillet over medium heat and add a drizzle of olive oil. Add the sliced onion and sauté for a couple of minutes.

Add ½ cup water and cook for about 10 minutes, stirring occasionally, until the onions soften and begin to caramelize.

Add the sliced mushrooms and continue cooking until they soften and start to brown. If desired, add 2 tbsp butter and let it melt into the vegetables.

As the pasta cooks, add about 1 cup of pasta water to the pan along with the Boursin cheese. Stir until the cheese melts into a creamy sauce.

Add the cooked pasta and toss until coated in the sauce.

7. Stir in the Parmesan cheese and mix until everything is creamy and combined.
