Creamy peanut butter curry. One of my alllll time favorite meals! Such an easy weeknight dinners, comes together in less than 20 minutes but tastes like it’s been cooking for hours.

Add curry paste to a skillet over medium heat, along with chickpeas, coconut milk and cilantro. Stir, and bring to a simmer, let cook for 2-3 minutes.

Add spinach to pot and let wilt, cover with a lid and let cook for about 5 minutes on low heat, stirring occasionally. Remove lid and add peanut butter. Stir again and let cook for 5-7 more minutes until sauce thickens up.

Serve with chili crisp and cilantro 🌿
Notes & Tips
You can also sub the curry sauce for 1.5 tbsp red Thai curry paste
