There’s something really amazing about how you can just mix a handful of ingredient ona sheet pan, add some type of seasoning or sauce, and it comes out heavenly! Preheat oven to 425°F. Drizzle a sheet pan with olive oil or line with parchment paper.

Add chicken thighs, potatoes, onion rounds, and bell pepper to the pan.

In a bowl or cup mix melted butter, olive oil, lemon zest, lemon juice, Dijon mustard, garlic, salt, pepper, and oregano.

Drizzle the sauce over everything. Use your hands or forks to mix well and evenly coat.

Spread everything out evenly over the pan

Bake for 35–45 minutes, until the chicken is cooked through and the potatoes are tender with crispy edges.
