Crispy Beef Tacos with Yoghurt Lime Dressing

A recipe that both kids and husband approved! More often than not dinner needs to be quick and easy around here. I love spending hours cooking but unfortunately there’s not usually time for that, so this is a great recipe to have up your sleeve!

Heat a drizzle of olive oil in a large pan over medium heat. Add the onion and sauté for 2–3 minutes, until softened.

Add the ground beef and cook, breaking it up, until starting to brown.

Stir in the riced cauliflower, 1/2 cup water, taco seasoning, and half of the cilantro. Cook until the beef is fully cooked and everything is well combined. Remove from heat.

Preheat the oven to 375°F. Spray a sheet pan with olive oil or line with parchment paper.

Place the tortillas on the sheet pan. Spoon the beef mixture onto one side of each tortilla and top with shredded cheese. Fold the tortillas over.

Spray the tops lightly with olive oil. Optional: place another sheet pan on top to help them crisp evenly.

Bake for 10–15 minutes, until the tortillas are golden and crispy.

While the tacos bake, make the sauce. In a bowl, stir together the Greek yogurt, juice of 1 lime, remaining cilantro, salt, garlic powder, black pepper, and water until smooth and pourable.

Remove tacos from the oven and drizzle with the yogurt sauce before serving.
