Italian penicillin soup

2. Italian penicillin soup

Once the weather turns cool, this is the soup I make on repeat. Pastina soup is cozy, simple, and delicious! There's a reason people call it Italian penicillin. The base is just onion, carrots, celery, and garlic simmered in bone broth, then blended until silky and golden. I use bone broth instead of regular stock for the extra protein and nutrients, so it actually keeps you full. When I'm feeling under the weather, this is the first thing I want. It's filling, warming, and gives you a little nutrient boost when you need it most. My favorite part? You can make a big batch of the blended broth and freeze it. On a busy weeknight, just thaw a portion, cook some pasta, and dinner is on the table in about 15 minutes. It's the kind of recipe that makes fall weeks so much easier.

Creamy Chicken Noodle Soup

4. Creamy Chicken Noodle Soup

This is one of my absolute favorite cozy soups, and this version is extra creamy, loaded with veggies and tender potatoes, and full of such good flavor. It all comes together in one Dutch oven, which means one pot and way fewer dishes (my favorite kind of dinner). 🥘 I know some people swear by cooking the noodles separately, and you totally can if you prefer! I don't mind the noodles hanging out in the soup and soaking up all that flavorful broth. Just know it will thicken up as it sits, so if you're saving leftovers, add a splash of broth when you reheat. This is such a good soup to bring to a friend who's sick, just had a baby, or needs a little love. Or make it for yourself whenever you need a little pick-me-up. 🫶

Chicken Pot Pie Soup

6. Chicken Pot Pie Soup

Chicken pot pie is one of my absolute favorite comforting foods. I actually didn’t have it until a couple of years ago, because it’s not something I grew up with, but I instantly fell in love. Something about the mix of chicken, vegetables, potatoes, and those biscuits on top just is comfort to me. I loved this soup version so much that it might be the way I make it going forward, because comforting meals equal soup in my brain. You can make it thinner by adding more broth if you like, and I’d recommend keeping some on hand for reheating, since it thickens up quite a bit as it sits.

Lemon Chicken Orzo Soup

7. Lemon Chicken Orzo Soup

I know it’s in the middle of summer, but I’m definitely gearing up for soup season. This one’s still a summer soup though, super lemony, full of flavor and broth, filling enough to be dinner, and perfect to make on a Sunday so you’ve got lunch all week.

I love dumpling soup so so much! It’s one of the most comforting dishes, it’s nutritious and I swear I can eat it all year around! This one is so easy to throw together! The eggs are optional but I think they add both flavor and extra protein!
