Cold weather’s got me missing tomato girl summe. you know, when every dinner was toast, olive oil, and a mountain of tomatoes 🍅 So today, we’re bringing a little of that back with this cozy appetizer
Ingredients

Instructions
- 1
Cut up your bread and add it to a sheet pan. Drizzle generously with olive oil and a pinch of salt.
- 2
Add the bacon slices to the same pan. Bake at 350°F for about 10 to 15 minutes, until the bread is lightly crisp.
- 3
Remove the bread from the oven and let the bacon cook for another 5 to 10 minutes, or until crisp.
- 4
While the bacon finishes, grate your tomato using a grating plate or regular cheese grater. Add the grated tomato to a bowl with about a tablespoon of olive oil and the dried basil. Mix to combine.
- 5
Spoon some of the tomato mixture over each piece of toast.
- 6
Tear the burrata into small pieces and place on top of each toast.
- 7
Cut the bacon into 12 pieces and add one to each toast.
- 8
Tip: If you’re serving this at home, assemble shortly before serving for the best texture. If you’re bringing it to a party, you can pack the tomato mixture, burrata, and bacon separately and assemble when you arrive. The crisp bread helps prevent everything from getting soggy, so you can also prep them a little ahead if needed.
