Comfort Chicken Soup
One of my most popular recipe is the one pan comfort chicken, since it’s fall, I decided to turn it into soup! Same chicken, same potatoes, same creamy sauce, just in a bowl now. Spinach instead of green beans. Still one pot 🫶

Ingredients
Chicken thighs
Thighs stay juicy in a soup in a way breast really doesn’t. Sear them whole and cook them all the way through in the pot first, then let them rest and chop them once the potatoes are almost done. Rotisserie chicken works beautifully, just skip the sear and stir the shredded meat in at the end.
Potatoes
I’d recommend using Baby potatoes or Yukon gold.
Flour
Only a quarter cup, and it does so much. You sprinkle it over the softened onions and stir it around for a minute before the broth goes in, makes the soupy creamy rather than watery.
Spinach
Goes in at the very end, off the boil, and wilts in about a minute. Fresh baby spinach is easiest but frozen works too (thaw it and squeeze out the water first, otherwise it waters down the whole pot). Kale is great if you like more chew, just give it a few extra minutes.
Storage
Let it cool to room temperature, then store in an airtight container in the fridge for 3 to 4 days. It thickens up a lot as it sits, so loosen it with a splash of broth when you reheat, and warm it gently on the stove so the cream stays smooth.

Season the chicken thighs generously with salt. Heat the olive oil in a Dutch oven over medium high and sear the thighs until browned and cooked through, about 5 to 6 minutes per side. Move them to a plate and let them rest while you build the soup.

Lower the heat to medium and add the butter. Once it melts, add the diced onion and cook until soft, about 4 minutes. Stir in the garlic powder, oregano, cumin, salt and pepper and cook until fragrant, about a minute.

Sprinkle the flour over the onions and stir constantly for 1 to 2 minutes. It will look dry and pasty. That’s exactly right.

Pour in the chicken broth, whisking so it stays smooth. Add the potatoes and any juices from the chicken plate and bring it up to a simmer.

Simmer uncovered until the potatoes are tender, about 15 minutes. While they cook, chop the rested chicken into bite size pieces.

Turn the heat to low. Add the chicken back in along with the cream and Parmesan and warm through gently, about 3 minutes. Do not let it boil.

Add the spinach a handful at a time and stir until wilted, about a minute. Taste, adjust the salt, and serve.
