    Stir together the softened cream cheese (or whipped cream cheese), Dijon mustard, and cranberry sauce until smooth.

    Add the diced celery, diced apple, drained tuna, lemon juice, salt, and black pepper. Mix until evenly combined.

    Lay out both puff pastry sheets and spread the tuna mixture evenly between them.

    Sprinkle each sheet with 1/2 cup of mozzarella cheese.

    Roll each sheet tightly into a log, then slice into pinwheels.

    Place the pinwheels on a lined baking sheet.

    Bake at 400°F for about 20 minutes, or until golden and cheesy.
